Protein Pancakes + Strawberry Banana Smoothie

Protein Pancakes 
1 cup whole milk
1 tbsp apple cider vinegar or lemon juice
1 1/4 cup all purpose flour
1 heaping scoop of Isopure Zero Carb Protein Powder, unflavored
1 tsp aluminum free baking powder
½ tsp baking soda
½ tsp kosher salt
1 large egg
1 tsp vanilla extract
1 tbsp melted butter, plus more for pan

Strawberry Banana Smoothie
1 cup sliced frozen strawberries
1/2 ripe frozen banana, peeled
1⁄2 tsp ground ginger or 1” peeled ginger knob
1 cup milk, vanilla almond milk or coconut milk
1 scoop Isopure Zero Carb protein powder, unflavored
Candied ginger for garnish

Directions

Protein Pancakes

  1. In a medium bowl or glass measuring cup, add milk. Stir in vinegar and let sit for 5-10 minutes.
  2. In a large bowl, whisk together flour, protein powder, baking powder, baking soda, and salt. To the milk mixture, add egg, vanilla and oil or butter, whisk until fully combined. Pour into flour mixture and stir until combined. Do not overmix, small lumps throughout the batter are fine.
  3. Heat a large skillet or griddle over medium heat. When hot, add 1 tsp of butter, swirl pan to coat. Pan should be hot when adding the batter. 
  4. Using a 1⁄4 cup measuring cup, scoop batter onto the hot skillet. 
  5. Cook pancakes until bubbles form on the top, if the underside is browning too fast, lower heat, about 1 to 2 minutes. Flip and cook about 1 to 2 minutes longer. Serve immediately, or place in a 200F oven until ready to serve with honey or maple syrup. 
  6. Repeat with remaining batter, using tsp of butter each time to grease the pan.

Strawberry Banana Smoothie

  1. Add all ingredients to a blender and puree until smooth. Pour into glass and drink immediately.
