Almond butter + more for topping | 1 tsp |
Unsweetened applesauce | 1 tbsp |
Milk of choice (I used unsweetened almond) | 1/4 cup |
Coconut flour | 2 tbsp |
Baking powder | 1/4 tsp |
Diced apples | 2 tbsp |
Place the almond butter, applesauce and milk in a bowl and whisk until uniform.
Add the protein powder, coconut flour and baking powder. Mix well.
Pour the batter into a cup or ramekin and top with dices apples.
Microwave for 1 minute 30 seconds to 2 minutes, until the cake is firm to the touch. Don’t overcook as it gets dry very easily.
Serve immediately, with a drizzle of almond butter (optional).
