In a medium sized bowl, add all ingredients (except the pistachios), and mix until crumbly. Once a crumbly consistency forms, use your hands to press the dough into itself and form a large ball of dough out of the crumbles. From the ball of dough, form 12 truffle sized balls. Add the crushed pistachios to a shallow dish and gently press the fat bombs into them.
