Protein Peanut Butter Chocolate Breakfast Cookie

INGREDIENTS
Oat Flour, see post for subs 3 Tbsp, 17g
Isopure Zero Carb Creamy Vanilla  Protein ½ scoop, 15.5g
Peanut Butter Powder 1½ Tbsp, 9g
Isopure Whey Protein Isolate Unflavored 1 Tbsp, 5g (or more oat flour)
Baking Powder ¼ + ⅛ tsp
Unsweetened Applesauce 2 Tbsp, 30g
Non-fat Plain Greek Yogurt 2 Tbsp, 28g
Creamy Peanut Butter ½ Tbsp, 8g
Unsweetened Almond Milk 2 tsp, 10ml
   
Filling:  
Chocolate Piece, or ¾ oz
Chopped Chocolate/ Chips, Sugar free recommended 21g
   
INSTRUCTIONS

Preheat oven to 350°F and line a baking sheet with parchment paper.

Combine all the dry ingredients in a bowl - oat flour, vanilla protein powder, peanut butter powder, unflavored protein powder and baking powder.

Add applesauce, Greek yogurt, peanut butter and almond milk and mix.

Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.

Place chocolate piece in the middle, cover with remaining cookie mixture and shape.

Bake about 13-14 minutes - top should be cooked and dry to touch.

Let cool for a few minutes and enjoy!
