Protein Vanilla Pudding Pie

This Protein Vanilla Pudding Pie is amazingly simple to make and tastes great!

INGREDIENTS
Dry ingredients:
Isopure Creamy Vanilla protein powder 1 Scoop
Granulated sugar substitute 1/6 Cup
Coconut flour 1/4 Cup
Self rising flour 1 Cup
 
Liquid ingredients:
Egg 1
Egg white 1
Melted coconut oil 2 Tbsp
 
Pudding filling:
Isopure Creamy Vanilla protein powder 1 Scoop
Sugar-free fat-free vanilla pudding mix  1 packet
Fat free milk 1 1/2 cups
INSTRUCTIONS
To make the crust, add all the dry ingredients to a large bowl and mix well. Pour liquid ingredients into dry and mix until crumbly. Use your hands to work the crumbles into a bowl of dough. Spray an 8x8 baking dish with baking spray. Add your dough and form it to the pan by spreading it from the center out. Make sure the bottom is as thin as possible. Bake at 350 degrees for 10-12 minutes. For the pudding filling, add all three ingredients into a medium sized bowl and whisk until pudding mix has dissolved and starts to thicken a bit. Add pudding to your pie crust when it cools.
