Protein Veggie Burgers

Olive Oil 1 Tbsp
Chopped Green Pepper 1/2 Large Pepper
Chopped Onion 1/2 Large Onion
Minced Garlic 3 Cloves
Black Beans 2- 15oz Cans Strained & Washed
Feta Cheese 1/2 Cup (Full Fat)
Large Eggs 2

Worcestershire Sauce 1 Tbsp
Cumin 1 Tsp
Chilli Powder 1 Tsp
Garlic Powder 1/2 Tsp
Smoked Paprika 1/4 Tsp
Salt Pinch
Pepper Pinch

In a skillet set to medium heat and add the olive oil, peppers, onions and garlic. 

Cook until the onions soften and become translucent. 

Set them aside in a bowl lined with paper towels. 

Next, add the black beans to a baking sheet lined with parchment paper, and evenly spread them out in the sheet.  Also make sure to dry them off as best as you can with a paper towel.  

Bake them at 325 Degrees for 15 minutes. 

Now in a food processor add all the remaining ingredients and process until combined.  Once the beans are done baking add them into the food processor and pulse until the beans incorporate into the other ingredients - you want there to still be some chunks of beans in the mixture when you are done processing.  

Now use a 1/3 cup measuring utensil to scopp out the veggie burger batter from the food processor and shape it into a burger.  

*Note: If the batter is too sticky, wet your hands to make it easier to shape the batter into burgers.  Once you form 5 equal size burgers cook them on the grill at 350 degrees (make sure you coat foil with baking spray if using this method) or on the stove at medium high heat for around 7 minutes a side.  Once the burgers are done - add the toppings of you choice and enjoy!
