Chicken & Cheese Protein Quesadilla

2 tbsp Olive oil
2 lb Chicken tenderloins
¼ cup Isopure Zero Carb Unflavored Protein Powder
1 tsp Garlic powder
Pinch of dried oregano
Pinch of paprika
Salt & pepper to taste
Juice from ½ a lime
4 flour tortillas, 12-14 inches diameter
1 tbsp Butter
1 cup Shredded cheese
2 sliced Green onions for garnish

Directions

  1. In a skillet, combine 2 tbsp olive oil with 2 lbs chicken tenderloins, ¼ cup Isopure Zero Carb Unflavored Protein Powder, 1 tsp garlic powder, pinch of dried oregano, pinch of paprika, and salt & pepper to taste. Cook chicken over medium heat until golden, about 10 minutes. 
  2. Drizzle chicken with lime juice and let cool before slicing.
  3. To assemble the quesadillas, add 1 tbsp butter to large skillet, melting over medium heat before adding large flour tortilla (12-14 inches) and topping with half of chicken mixture and ½ cup shredded cheese. Top with other tortilla.
  4. Cook until golden on one side and flip carefully. Repeat to make second quesadilla.

Topping: 

  1. Mix up ½ cup sour cream with 2 tbsp Isopure Zero Carb Unflavored Protein Powder and salt & pepper to taste. Add a dollop of sour cream mixture to top of each quesadilla and garnish with sliced green onion.
