Vanilla Protein Oatmeal Cookies

1 scoop Isopure Creamy Vanilla Protein Powder

1 cup rolled oats

½ cup almond flour (or oat flour)

1 tsp baking powder

½ tsp cinnamon

1 pinch salt

2 tbsp coconut oil (melted)

2 tbsp maple syrup (or honey)

1 egg (or flax egg for vegan)

1 tsp vanilla extract

2 tbsp dark chocolate chips (or raisins for a fruity twist)

Directions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix oats, protein powder, almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together egg, melted coconut oil, maple syrup, and vanilla extract.
  4. Combine wet and dry ingredients. Stir until a thick dough forms.
  5. Fold in chocolate chips (or raisins).
  6. Scoop dough into 10–12 cookies on the baking sheet, pressing slightly to flatten.
  7. Bake for 10–12 minutes, until edges are lightly golden.
  8. Cool for 5 minutes before enjoying!
