Vanilla Protein Oatmeal Cookies
Directions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix oats, protein powder, almond flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together egg, melted coconut oil, maple syrup, and vanilla extract.
- Combine wet and dry ingredients. Stir until a thick dough forms.
- Fold in chocolate chips (or raisins).
- Scoop dough into 10–12 cookies on the baking sheet, pressing slightly to flatten.
- Bake for 10–12 minutes, until edges are lightly golden.
- Cool for 5 minutes before enjoying!
