🍑 Peach Cobbler Protein Chia Pudding
1. Make the Chia Pudding
• Whisk milk + protein powder until smooth (prevents clumps)
• Stir in chia seeds, vanilla, and sweetener
• Refrigerate at least 2–4 hours (or overnight) until thick

2. Cook the Peaches
• Heat peaches, lemon juice, cinnamon, and sweetener in a small pan
• Cook 5–8 minutes until soft and jam-like
• Stir in cornstarch (optional) for a thicker cobbler filling
• Let cool

3. Make the Crumble
• In a small pan, toast oats with butter/coconut oil, cinnamon, and sweetener
• Cook until lightly golden and crumbly (about 3–5 minutes)

4. Assemble
Layer in a jar or bowl:
• Chia pudding
•. Warm or cooled peach filling
• Oat crumble topping
